Why it works: Sugar and chocolate are a kitchen classic. They rank in the top 13% of all ingredient pairs, and cooks put them together in 15,404 recipes. Both carry guaiacol, which smells smoky, sweet. The science ↓
Chocolate Puffs
Ingredients
Directions
Beat the egg whites until very stiff.
Gradually add the powdered sugar while continuing to beat.
Finely grate the chocolate and dredge it with flour to prevent oiling.
Mix the chocolate into the egg and sugar mixture thoroughly.
Line a square tin pan with a sheet of fine white paper.
Place small spots of powdered sugar on the paper, about the size of a half dollar.
Spoon a portion of the mixture onto each spot, smoothing it with a spoon or knife dipped in cold water.
Sift additional powdered sugar over the top of each puff.
