Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they set with heat, giving it a creamy body.
Blanched almonds
Provide the main almond flavor and body, thickening the milk as a paste.
Fresh milk
Forms the liquid base that the eggs and almonds set into a custard.
Powdered sugar
Adds sweetness and dissolves smoothly into the warm custard.

The step that matters

Return to the heat and stir until the mixture begins to thicken. Eggs set when heated, but overheating can scramble them. Stirring over gentle heat keeps the custard smooth as it thickens.
