Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the milk mixture into a firm, sliceable cream as it cools.
Eggs
Egg yolks thicken the milk mixture and add richness to the cream.
Sugar
Sweetens the cream and helps the yolks stay smooth while beaten.
Chocolate
Gives the cream its chocolate flavour and some body.

The step that matters

Heat the mixture to boiling, stirring constantly. Egg yolks can curdle or scramble if overheated or left unstirred. Constant stirring spreads heat evenly, so the yolks thicken the milk smoothly before the pan is removed from the heat.
