Ingredients

Directions

  1. Blanch the bitter almonds, then soak them in cold water for a while. Remove, dry with a clean cloth, and pound each almond in a mortar, adding a little rose water as needed. Set aside in a cool place.

  2. In a deep pan, combine the powdered sugar and cut in the butter. Warm it slightly, then stir until light and fluffy.

  3. Add the pounded almonds gradually, mixing well. Set aside in a cool place.

  4. Sift the flour and beat the egg whites until stiff peaks form. Fold the egg whites into the butter, sugar, and almond mixture, alternating with the flour.

  5. Mix everything thoroughly, then pour the batter into a well-buttered tin pan and bake immediately.
