Ingredients

Directions

The book says “a good oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Beat the butter until creamy.

  2. Gradually add the flour and powdered sugar, mixing well.

  3. Stir in the caraway seeds and chopped almonds until smooth.

Shape and bake

  1. Divide the dough into six pieces.

  2. Roll each piece out on parchment paper to about 1 inch thick.

  3. Pinch the edges and prick the surface with a fork.

  4. Decorate with strips of candied orange peel.

  5. Bake in a good oven at 350°F (175°C) for 25 to 30 minutes.

What each ingredient does

All-purpose flour
Forms the main structure of the dough as its proteins and starch set during baking.
Unsalted butter
Provides fat that makes the shortbread tender and rich, and gives it its crumbly texture.
Powdered sugar
Dissolves easily into the butter, adding sweetness and a fine, tender crumb.
Caraway seeds
Adds a distinctive aromatic flavour that contrasts with the rich butter.
Blanched almonds
Add crunch and a nutty flavour to the dough.

The step that matters

Beating the butter until creamy. Creaming softened butter traps air and evenly distributes fat, which affects the tender, crumbly texture. Under-creamed butter leaves the dough dense and uneven.
