How to Preserve Tomatoes, Grapes, Plums, Etc
Ingredients
Directions
Make a large box as air-tight as possible, lining the inside with strong paper.
Install movable racks made of laths, spaced about 5 inches apart.
Place the fruit in a single layer on the racks, using only unblemished fruit.
Break brimstone into small pieces and ignite until fully aflame.
Place the burning brimstone in a saucer at the bottom of the box and close it tightly.
Leave the box closed for 2-3 hours, longer for larger fruit.
Remove the fruit and place it in open-mouthed jars.
Pour lukewarm water over the fruit, then remove the racks and place the jars back in the box.
Repeat the sulphur process as before and cover the jars with paper to keep out dust.
Store the jars in a cool place.
