The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Beat the eggs separately.

  2. Add the butter to the yolks and beat well.

  3. Alternately add the milk and flour.

  4. Stir in the salt and sugar.

  5. Gently fold in the whipped egg whites.

Bake and serve

  1. Preheat and lightly grease the pan.

  2. Bake in a hot oven at 400°F (200°C) until done.

  3. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while yolks add richness and structure to the batter.
Flour
Forms the structure that holds the muffin's crumb as it bakes and sets.
Butter
Adds fat for tenderness and a richer texture in the crumb.
Sweet milk
Provides the liquid that hydrates the flour and helps the batter bake through.
Sugar
Adds sweetness and helps the crust brown during baking.

The step that matters

Gently fold in the whipped egg whites. Whipped whites hold the air that makes muffins light. Stirring vigorously knocks that air out, so the muffins bake up dense instead of rising well. Fold slowly with a spatula until just combined.
