Clear Soup

Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

Make the broth

  1. Cut the beef into small pieces and place in a large pot with cold water.

  2. Bring to a boil and simmer for about 5 hours.

  3. Strain the broth and let it cool; skim off any fat that rises.

  4. Return the broth to the pot and add the chopped onion and celery.

Finish and serve

  1. Boil for an additional 30 minutes, then strain again and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Supplies the main meaty flavour and, through long simmering, body to the broth.
Onion
Adds aromatic sweetness that rounds out the broth's flavour.
Celery
Adds a gentle, fresh aroma to the broth.

The step that matters

Strain, cool and skim the broth. Fat rises to the surface as the broth cools and is easiest to remove at that point. Removing it before the final boil keeps the soup clear and less greasy.

Swap the onion

How well each one fits the dish's main ingredients (beef, celery, pepper):

  1. Carrotfits better
  2. Tomatofits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against beef, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
