Baked Tomatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Peel the tomatoes and cut out the center, leaving about an inch around the edge.

  3. Mix bread crumbs, butter, coarse sea salt, black pepper, and heavy cream together.

  4. Fill the tomatoes with the mixture and add onion if desired.

  5. Place the tomatoes in a baking pan and bake for 20 minutes.

  6. Remove from the oven and serve immediately.
