Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the milk and 2 cups of flour, mixing well.

  3. Beat the egg whites until very stiff and fold them into the mixture.

  4. Sift the baking powder with the remaining cup of flour three times, then fold it into the batter.

  5. Add the almond flavoring and mix gently.

Bake

  1. Bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air and give the cake its light, feathery structure.
Butter
Creamed with sugar, it holds air bubbles and adds richness and tender texture.
Sugar
Creamed with butter, it helps build air pockets and adds sweetness and browning.
Flour
Provides the main structure that sets as the cake bakes.
Baking powder
Releases gas in the batter, helping the cake rise.

The step that matters

Folding in the stiff egg whites. Stiffly beaten whites hold much of the cake's air. Folding gently keeps that air in; stirring hard deflates the batter and yields a dense, flat cake.
