Economical Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the yolks of the eggs with the sugar and butter until very light.

  2. Add the cold water and half of the flour; beat until smooth.

  3. Fold in the beaten egg whites and the remaining flour with the baking powder.

  4. Flavor with nutmeg, mix well, and pour into a loaf pan.

Bake

  1. Bake in a moderate oven at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter and beaten whites lighten it and help it rise.
Sugar
Sweetens the cake and helps the creamed mixture hold air when beaten.
Butter
Adds fat for tenderness and flavor and helps trap air when creamed with sugar.
Flour
Forms the structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter so the cake rises and becomes light.

The step that matters

Folding in the beaten egg whites. Egg whites hold air that lifts the cake. Folding gently keeps that air in; vigorous stirring knocks it out, leaving a denser loaf.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, butter, flour):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against egg, sugar, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
