Why it works: Cucumber and lemon match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,067 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ripe Cucumber Preserves

Ingredients

Directions

  1. Gather ripe cucumbers and cut them in half.

  2. Soak the halves in weak alum water for 24 hours, then wash and drain them.

  3. In a kettle, add enough sugar to make a good syrup and cook for about 15 minutes.

  4. Scrape the seeds out of the cucumbers and add them to the syrup.

  5. Boil the cucumbers slowly until they are clear, adding slices of lemon peel while boiling.

  6. When a fork easily pierces the cucumbers, remove them to jars and strain the syrup over them.

  7. Seal the jars and let them sit for 2 to 3 months before using.
