Carrot Puree

Ingredients

Directions

  1. Scrub and peel the carrots, placing the peels in a stock pot for soup.

  2. Boil the peeled carrots in just enough water to cover them, adding more water as it evaporates.

  3. Once the carrots are soft, drain the water into the stock pot.

  4. Mash the carrots through a wire sieve to create the puree.

  5. To clarify cocoa butter, place it in a baking tin with a little water and melt it in the oven.

  6. Pour the melted cocoa butter into a jar, discard the water after it cools.
