What each ingredient does

Lamb forequarter
Provides the main meat, which becomes tender and juicy during the long slow cook.
Egg yolk
Brushed on as a glaze, it helps the surface take on color and a richer finish.
Bread crumbs
Sprinkled on top, they form a crisp, golden crust as they brown.
Gravy
Mixed with egg yolk for basting, it adds moisture and savory flavor to the meat surface.
Lemon
Its juice adds acidity that brightens the rich, fatty flavor of the lamb.

The step that matters

Remove the paper when nearly done. Removing the paper late lets the surface dry and brown; leaving it on too long keeps the meat steamed and pale.

Swap the mint

How well each one fits the dish's main ingredients (lamb, butter, egg, bread, lemon, sauce):

  1. Parsleyfits better
