Why it works: Pepper and thyme are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 11,585 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Roast Chicken
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Ask the butcher to draw the chicken and remove the legs, wings, and neck for fricassee.
Rinse the chicken inside and out in cold water, wipe dry, and prepare the stuffing.
Soak the bread crumbs in cold water.
Steam the soaked bread crumbs in a covered vessel in a 400°F (200°C) oven for 30 minutes.
Mix black pepper, coarse sea salt, thyme, and butter with the steamed bread crumbs to form a paste.
Add more water if needed to achieve desired consistency.
Stuff the chicken with the breadcrumb paste.
Sew the chicken closed.
Dredge the stuffed chicken with flour and black pepper.
Roast
Place the stuffed chicken on a meat rack in a deep pot.
Add boiling water to the pot.
Bake at 350°F (175°C) for 2-4 hours.
Remove the cover for the last 30 minutes.
Sprinkle the chicken with salt.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken
- Provides the main protein and the cavity that holds the stuffing while it cooks.
- Bread crumbs
- Absorb moisture and form a soft stuffing that stays tender inside the bird.
- Butter
- Adds fat for richness and helps the stuffing taste savory and smooth.
- Flour
- Dredging the chicken helps the outer skin brown and form a light crust.
The step that matters
Covering and uncovering the pot. Cooking covered with boiling water steams the bird gently and keeps it moist, while removing the cover near the end lets the skin dry and brown. Leaving the cover on throughout would leave the skin pale and soft.
Swap the thyme
How well each one fits the dish's main ingredients (chicken, bread, pepper, butter, flour):
- Parsleyfits about as well
- Thymethe original
- Marjoramfits about as well
- Garlicfits about as well
Fit is the average pairing score against chicken, bread, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
