Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Mix the crushed crackers with salt if using fresh oysters.

  2. Roll each oyster in the cracker crumbs.

Fry and serve

  1. Heat a skillet and add 1 tablespoon of butter.

  2. Fry the oysters in the hot butter until golden brown, about 1-2 minutes per side.

  3. Turn the oysters with a broad-bladed knife, avoiding piercing them.

  4. Add the remaining butter after turning the oysters.

  5. Season lightly with pepper and serve on a hot platter.

What each ingredient does

Oysters
Main ingredient; the cracker coating and brief frying cook the outside while keeping the inside tender.
Milk or sea-foam crackers
Crushed into crumbs that form a crisp, golden coating when fried.
Butter
Fat that conducts heat for frying and adds richness and browning to the coating.

The step that matters

Turn the oysters gently and avoid piercing them. Piercing lets juices escape and the coating can tear off, leaving the oysters dry and uneven. A broad-bladed knife lifts them intact so the crumb crust stays whole and browns evenly.
