Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flake tapioca
Starch that swells and thickens the milk into a pudding as it cooks.
Milk
Forms the liquid base, giving the pudding its body and creamy richness.
Egg yolk
Adds richness and helps thicken the custard as it cooks.
Sugar
Provides sweetness and balances the flavor of the milk and egg.

The step that matters

Adding the egg yolk mixture. Thin the beaten yolk with some hot milk before stirring it in. Gently warming the egg first keeps it from scrambling and lets it thicken the pudding smoothly.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, sugar, vanilla):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits less well
  4. Peppermintfits less well

Fit is the average pairing score against milk, egg, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
