Baked Apples with Meringue

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Preheat the oven to 400°F (200°C).

  2. Peel and core the apples, then fill the centers with sugar.

Bake and top

  1. Cover the apples and bake until nearly done.

  2. Remove the cover, and top each apple with a spoonful of frothed egg whites beaten with 1 cup of sugar.

  3. Return to the oven and brown lightly.

Serve

  1. Serve very cold.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Hold their shape while baking and soften into a tender, juicy filling.
Egg whites
Whipped into a foam that sets into a light meringue topping that browns in the oven.
Sugar
Sweetens the apples and the meringue, and helps the meringue brown lightly.

The step that matters

Brown the meringue lightly. Egg white foam can over-brown or weep if left too long, so watch it closely in the final heat. Sugar browns faster than the apple itself, so a short return to the oven is enough.

Swap the apple

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
