Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb sweetbreads
Provide the tender, delicate meat that forms the body of the salad.
Cream salad dressing or mayonnaise
Adds moisture and richness, binding the pieces together and softening their texture.

The step that matters

Cooking the sweetbreads gently. Boiling hard or overcooking toughens the delicate protein and makes sweetbreads firm and rubbery. A gentle simmer sets them just until tender, and the ice-water chill stops cooking so they stay soft.

Swap the lettuce

How well each one fits the dish's main ingredients (lamb, cream):

  1. Potatofits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Lettucethe original

Fit is the average pairing score against lamb, cream. Candidates are from the same food group and used in at least 100 recipes.
