Baked Hash

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Place the hash in a baking dish and bake until the top is a fine brown.

  3. Slice the potatoes and coat them with bread crumbs.

  4. Fry the breaded potatoes in a spoonful of salt-pork drippings until rich brown.

  5. Serve the baked hash in the baking dish or transfer it to a platter, garnished with the fried potatoes.
