Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Emulsifies the oil and vinegar, giving the dressing a creamy, thickened body.
Olive oil or melted butter
Adds fat and richness, carrying flavour and giving the dressing a smooth mouthfeel.
Vinegar
Adds acidity that brightens the flavour and balances the richness of the fat.
Mustard
Contains compounds that help stabilise the emulsion and add sharp, savoury flavour.

The step that matters

Stir in the olive oil or melted butter slowly. Fat must be dispersed into the egg yolk gradually so the proteins can surround the droplets. Adding it too quickly can make the dressing break and separate instead of staying smooth and creamy.
