Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Peel and core the apples.

  3. Fill the centers of the apples with sugar.

  4. Cover the apples.

Bake and finish

  1. Bake until nearly done.

  2. Remove the cover.

  3. Top each apple with a spoonful of beaten egg white mixed with 1 cup of sugar.

  4. Return the apples to the oven.

  5. Brown lightly.

  6. Serve very cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Hold their shape while baking and soften into a tender, juicy filling.
Egg white
Whipped and spooned on top, it sets into a light crust that browns in the oven.
Sugar
Sweetens the apples and the meringue, and helps the topping brown.

The step that matters

Brown lightly after topping. Meringue sets and browns quickly in a hot oven, so it can scorch or weep if left too long. Watch it closely and stop once it is lightly golden.

Swap the apple

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
