Ingredients

Directions

Prepare the chicken

  1. Cut the chicken into 13 pieces: legs, wings, back, and stomach.

  2. Boil the chicken pieces in water for 1-2 minutes, then drain.

Braise

  1. In a stewpan, melt the butter and flour until bubbling.

  2. Add the water or broth, parsley, nutmeg, onions, salt, and pepper.

  3. Add the chicken pieces, cover, and bring to a boil.

  4. Reduce heat to simmer, shaking occasionally for even cooking.

  5. Cook for 1 hour for young chicken, 2 hours for older chicken.

  6. Remove the chicken and keep it warm; strain the sauce if desired.

Finish the sauce and serve

  1. Add mushrooms and their liquor to the sauce, boil for 1 minute.

  2. In a separate bowl, beat the egg yolks with milk.

  3. Remove the sauce from heat, wait 1 minute, then stir in the yolks.

  4. Return to low heat, stirring until thickened but do not boil.

  5. Arrange the chicken on a serving dish as desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat that is braised until tender in the sauce.
Butter and flour
Form a roux that thickens the sauce as it cooks.
Egg yolks
Thicken and enrich the sauce when gently heated with milk.
Onions
Add sweetness and aroma to the braising liquid.
Mushrooms
Add earthy flavor and moisture to the finished sauce.

The step that matters

Adding the egg yolks. Egg yolks thicken through gentle heat, and if the sauce boils after they go in, they can curdle and turn grainy. Removing the pan from heat first and stirring gently keeps the sauce smooth.
