What each ingredient does

Egg yolks
Thicken the sauce and enrich it, giving it a smooth, creamy body when gently heated.
Flour
Cooked in the butter, it forms a roux that thickens the gravy.
Butter
Provides fat for the roux and adds richness and flavour to the sauce.
Onion
Releases flavour into the cooking water and gravy as the chicken simmers.

The step that matters

Stir the egg yolks into the sauce after it has cooled. Egg yolks begin to set around 65°C (150°F). If the sauce is too hot when they go in, they can scramble and curdle instead of thickening it smoothly.

Swap the onion

How well each one fits the dish's main ingredients (chicken, parsley, nutmeg, pepper, butter, flour, egg):

  1. Shallotfits better
  2. Spinachfits better
