Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Preheat the oven to 400°F (200°C).

  2. Place the beef on a wire rack in a roasting pan and dust with flour without seasoning.

Roast

  1. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, basting frequently.

  2. If desired, add peeled potatoes to the pan, sprinkling them with salt and turning them while basting.

  3. After 1 hour, turn the beef to brown evenly.

Make the sauce and serve

  1. Transfer the beef to a hot dish and arrange potatoes around it.

  2. Pour off excess fat from the pan and add 1 cup boiling water, scraping the pan to dissolve any residue.

  3. Add salt and pepper, and boil for 2-3 minutes until rich.

  4. Serve the sauce in a sauceboat, and garnish the beef with salt, parsley, and freshly scraped horseradish if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Provide the main meat, which becomes tender and juicy as it roasts slowly with basting.
Flour
Dusted on the surface, it helps form a crust that browns during roasting.
Potatoes
Roast alongside the beef, absorbing drippings and taking on savory browning.

The step that matters

Turning the beef after one hour. Turning lets the meat brown evenly on all sides; uneven heat exposure otherwise leaves pale, dry patches and uneven crust.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (beef, flour, pepper, parsley, horseradish):

  1. Shallotfits better
  2. Turnipfits better
  3. Chivefits better
  4. Potatothe original

Fit is the average pairing score against beef, flour, pepper, parsley, horseradish. Candidates are from the same food group and used in at least 100 recipes.
