Sweet Patties

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the patties

  1. Roll the puff paste to ⅓ inch thick and cut out three rounds with a biscuit cutter.

  2. Stack two rounds on top of each other.

  3. Use a smaller biscuit cutter to press down, cutting only one-third through.

Bake and shape

  1. Glaze the tops with egg white and bake in a 400°F (200°C) oven until golden.

  2. Once baked, remove the center piece of the patties to create a shell.

  3. Scoop out the soft dough, leaving ½ inch of crust.

Fill and serve

  1. Fill the shell with sweetened whipped cream flavored with vanilla or jam, and replace the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff paste
Its laminated layers puff up in the oven, forming the light, flaky shell.
Egg white
Glazing the tops helps them brown to a glossy golden color in the oven.
Thick cream
Whipped into a stable filling that adds richness and a soft, creamy texture.
Jam or preserve
Adds sweetness and fruity flavor to the filling.

The step that matters

Cutting only one-third through the stacked rounds. Cutting too deep can split the layers apart, while cutting too shallow stops the top from lifting cleanly. A partial cut lets the pastry rise into a hollow lid and keeps the shell intact for filling.
