What each ingredient does

Cauliflower
Is the vegetable being cooked, becoming tender as it boils through its dense stalk and florets.
Baking soda
Raises the water's pH, which helps the cauliflower soften more evenly during boiling.
Hollandaise sauce or white sauce
Adds richness and fat that contrasts with the mild, cooked cauliflower.

The step that matters

Boil until the stalk is just tender. Boiling past tender turns cauliflower mushy and releases sulfurous compounds, while undercooking leaves the dense stalk firm and raw-tasting. Checking the stalk, which is thicker than the florets, gives the most reliable doneness.
