What each ingredient does

Chicken
Provides the main protein and the flavorful juices that become the gravy.
Butter and flour
Melted together, they form a roux that thickens the gravy into a smooth sauce.
Egg yolks
Enrich the sauce and give it body and a silky texture when gently heated.
Onions
Add savory sweetness and aroma to the cooking liquid that becomes the gravy.

The step that matters

Stirring the egg yolks into the sauce. Egg yolks thicken when heated, but if the sauce is too hot they can scramble and curdle. Letting the sauce cool briefly before adding the yolk mixture helps keep it smooth.
