Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Provides the meat that becomes tender through long, gentle stewing.
Flour
Coats the meat and later helps thicken the gravy.
Onion
Adds savory sweetness and body to the stewed gravy.
Carrot
Adds subtle sweetness and body to the gravy as it breaks down.
Turnip
Adds earthy flavor and body to the gravy as it breaks down.
Brown thickening
Thickens the gravy and adds color.

The step that matters

Cook gently and keep the pot covered. Low, gentle heat with a tight lid lets the tough round steak relax and become tender without drying out or toughening. Boiling hard forces moisture out of the muscle fibers and leaves the meat chewy.

Swap the onion
