Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish chestnuts
Provide the main bulk and starchy, nutty flavour of the forcemeat.
Butter
Adds richness and fat, giving the mixture a smooth, moist texture.
Bread crumbs
Absorb moisture and lighten the mixture so it holds its shape.
Egg yolks
Bind the mixture together and help it set when cooked.

The step that matters

Stewing the chestnuts in gravy until tender. Chestnuts must be fully softened before pounding; firm pieces stay grainy and will not blend into a smooth forcemeat that holds together.
