Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Sweetbreads Stewed with Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Parboil and skin the sweetbreads.

  2. Lard the sweetbreads all over the top.

Make the stew

  1. In a stewpan, layer the sliced fat pork, chopped onion, minced carrot, minced celery, and minced parsley.

  2. Place the sweetbreads on top of the vegetables.

  3. Add enough stock to cover the bottom, but not the sweetbreads.

  4. Stew gently for 1 hour.

Brown and finish

  1. Remove the sweetbreads and place them larded side up in a 400°F (200°C) oven until pale brown.

  2. Strain the gravy, rubbing as much through a sieve as possible.

  3. Return the gravy to a saucepan, thicken with roux, and add the canned mushrooms.

  4. Boil for 1 minute.

  5. Serve the sweetbreads on a dish, pouring the mushrooms in the center and the gravy around.

What each ingredient does

Sweetbreads
Main protein; parboiling firms them so they hold their shape while stewing.
Fat pork
Melts into the stock, adding richness and moisture to the gravy and sweetbreads.
Stock
Liquid base that gently cooks the sweetbreads and forms the body of the gravy.
Roux
Flour and fat mixture that thickens the strained gravy to a smooth consistency.
Carrot
Adds subtle sweetness and aromatic depth to the stewing liquid.
Onion
Adds aromatic savoury flavour that deepens the gravy as it stews.

The step that matters

Straining and rubbing the gravy. Pressing the vegetables through the sieve releases their starch and body, giving the gravy a smooth, thickened texture. Leaving solids behind makes the sauce grainy.

Swap the onion

How well each one fits the dish's main ingredients (pork, carrot, celery, parsley, mushroom):

  1. Turnipfits better
  2. Potatofits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against pork, carrot, celery, parsley, mushroom. Candidates are from the same food group and used in at least 100 recipes.
