Roast Beef

Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Preheat the oven to 400°F (200°C).

  2. Place the beef on a wire rack in a roasting pan.

  3. Dust the beef with flour without seasoning.

Roast

  1. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, basting frequently.

  2. Add peeled potatoes to the pan.

  3. Sprinkle the potatoes with salt and turn them while basting.

  4. After 1 hour, turn the beef to ensure even browning.

  5. When done, the beef should be a rich dark mahogany color.

Make the sauce and serve

  1. Transfer the beef to a hot dish.

  2. Arrange the potatoes around the beef.

  3. Pour off excess fat from the pan.

  4. Add 1 cup of boiling water.

  5. Scrape the pan to dissolve any stuck bits.

  6. Add salt and pepper.

  7. Boil for 2-3 minutes until rich.

  8. Serve the beef in a sauceboat.

  9. Garnish the beef with fine salt, parsley, and freshly scraped horseradish if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ribs of beef
Provides the main roast, cooking through while the outside browns and develops flavour.
Flour
Dusted on the surface, it helps the outside brown and form a crust.
Potatoes
Roast alongside the beef in its drippings, absorbing fat and browning at the edges.

The step that matters

Turning and basting the beef. Frequent basting and turning keep the surface moist and promote even browning, so the outside does not dry out or scorch unevenly while the inside cooks.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (beef, flour, pepper, parsley, horseradish):

  1. Shallotfits better
  2. Turnipfits better
  3. Chivefits better
  4. Potatothe original

Fit is the average pairing score against beef, flour, pepper, parsley, horseradish. Candidates are from the same food group and used in at least 100 recipes.
