Sweet Patties

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the shells

  1. Roll the puff paste to ⅓ inch thick and cut out three rounds with a biscuit cutter.

  2. Stack the rounds, then use a smaller biscuit cutter dipped in flour to press down on top, cutting only one-third through.

  3. Glaze the tops with egg white and bake in a 400°F (200°C) oven until golden.

Hollow and fill

  1. Once baked, remove the center piece of each patty to create a shell.

  2. Scoop out the soft dough, leaving ½ inch of crust.

  3. Fill with sweetened thick cream flavored with vanilla or jam, piling it high.

  4. Replace the top cover on each patty.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine puff or rough puff paste
Its layered butter-and-dough structure puffs and crisps into a light, flaky shell.
Egg white
Glazing the tops helps them brown to a glossy golden color in the oven.
Thick cream
Adds moisture and richness to the filling, softening the crisp shell slightly.
Jam or preserve
Adds sweetness and fruity flavor to the filling.

The step that matters

Cutting only one-third through the stack. Cutting too deep splits the top layer apart, while cutting too shallow stops the lid from lifting cleanly. A light, even press with a floured cutter keeps the layers sealed so the pastry rises evenly into a defined cover.
