What each ingredient does

Butter
Browns to give a nutty, toasted flavour and forms the sauce's rich base.
Vinegar
Adds sharp acidity that balances the richness of the browned butter.

The step that matters

Allow the butter to brown without burning. Butter milk solids toast into nutty flavour only within a narrow window. Past that point they scorch, turning the sauce bitter and dark, so watch closely over medium heat.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (butter, vinegar):

  1. Tarragonfits better
  2. Garlicfits about as well
  3. Parsleythe original
  4. Capersfits about as well

Fit is the average pairing score against butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
