Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Mix the batter

  1. In a large bowl, combine molasses, water, sour milk, rye flour, corn meal, baking soda, and salt. Mix until well combined.

  2. Pour the mixture into a greased loaf pan.

Steam and bake

  1. Steam for 3 hours.

  2. After steaming, bake in a preheated oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds sweetness, depth of flavour and moisture to the bread.
Sour milk
Its acidity reacts with the baking soda so the bread rises and turns tender.
Rye flour
Gives the bread its dense, moist crumb and characteristic flavour.
Corn meal
Adds body and a coarse, crumbly texture to the loaf.
Baking soda
Reacts with the acid in the sour milk to produce gas that lifts the batter.

The step that matters

Steam before baking. Steaming in a sealed pan keeps the moisture in while the batter sets, so the loaf cooks through without drying out. Baking straight away would risk a dry, dense bread.
