What each ingredient does

Green tomatoes
Provide the bulk of the pickle, with firm texture that softens during cooking.
Onions
Add sweetness and savory flavor that mellows as the pickle cooks.
Coarse sea salt
Draws water out of the tomatoes and onions, firming them and concentrating flavor.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp tang.
Ground mustard
Adds pungent heat and sharpness that carries through the vinegar.

The step that matters

Draining overnight with salt. Salt pulls moisture out of the sliced vegetables. Draining thoroughly before cooking keeps the pickle firm rather than watery, and prevents excess liquid from diluting the vinegar.

Swap the tomato

How well each one fits the dish's main ingredients (onion, mustard, pepper, allspice, clove, vinegar):

  1. Horseradishfits better
