What each ingredient does

Hard-boiled eggs
Yolks mashed into the dressing add richness and body, while chopped whites add texture.
Salad oil
Adds fat and moisture, helping the dressing coat the chicken and celery smoothly.
Melted butter
Adds fat and rich flavor to the dressing.
Vinegar
Adds acidity that brightens the flavor and balances the richness of the oil, butter and yolks.
Mixed mustard
Adds sharp flavor and helps emulsify the dressing so it stays smooth.
Celery
Adds crisp texture and fresh, slightly savory flavor to the salad.

The step that matters

Mix thoroughly just before serving. Acidic vinegar and mustard can soften celery and dull its crispness over time, and an emulsified dressing can separate if left standing, so combining close to serving keeps texture and consistency.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (chicken, meat, egg, butter, vinegar, mustard, cabbage):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, meat, egg, butter, vinegar, mustard, cabbage. Candidates are from the same food group and used in at least 100 recipes.
