Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, rub together the butter and flour until well combined.

  3. Add the grated cheese, egg yolks, and egg white. Mix well.

  4. Roll the mixture into strips that are half an inch wide and four to five inches long.

Bake and serve

  1. Place the strips on a baking sheet and bake for about five minutes.

  2. Arrange the baked cheese straws on a plate in the shape of a log cabin.
