Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard

  1. Soak the tapioca in ½ cup of water.

  2. In a bowl, mix the egg yolks, sugar, and salt.

  3. Stir in the soaked tapioca and add the boiling milk and vanilla.

  4. Let the mixture thicken for a few minutes.

Top and bake

  1. Beat the egg whites to stiff peaks and fold in 1 tablespoon of sugar.

  2. Pour the pudding into a dish and drop spoonfuls of the frosting on top.

  3. Place the dish in a 350°F (175°C) oven to brown slightly.

Serve

  1. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in soaking water and thickens the milk as it cooks into a pudding.
Egg yolks
Thicken the custard and enrich it with richness and a smooth set.
Egg whites
Whipped to stiff peaks to form a light topping that browns in the oven.
Milk
Forms the liquid base that the tapioca thickens into a creamy pudding.
Sugar
Sweetens the custard and helps the meringue-style topping hold its peaks.

The step that matters

Let the mixture thicken before topping. Tapioca starch needs time in hot liquid to swell and thicken fully. If the pudding is topped or baked before it sets, the texture stays thin and runny.
