What each ingredient does

Cooked chicken
Forms the bulk of the filling and gives the croquettes their main flavour.
Butter
Adds fat and richness, and carries the onion flavour into the filling.
Flour
Thickens the broth so the filling holds its shape when cooled.
Chicken broth
Adds moisture and savoury flavour, binding the chicken into a soft paste.
Egg yolks
Set during gentle heating to bind the filling and make it firm enough to shape.
Bread or cracker crumbs
Form a crisp, golden outer coating when fried.

The step that matters

Cool the filling completely before shaping. A warm, soft filling is too loose to hold its shape and can burst or fall apart in hot fat. Chilling firms the starch and egg-thickened mixture so the croquettes keep their form.

Swap the onion

How well each one fits the dish's main ingredients (chicken, butter, flour, pepper, nutmeg, egg, bread):

  1. Capsicumfits better

  3. Leekfits better
