Orange Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, stir the beaten egg yolks with the warmed sugar.

  3. Add the water along with the grated peel and juice of the orange, mixing well.

  4. Gradually mix in the flour, then fold in the stiffly beaten egg whites.

  5. Prepare the cream by dissolving ½ sheet of isinglass in ½ teacup of boiling water, then strain.

  6. Add the grated peel and juice of 1 orange to the mixture.

  7. Stir in enough powdered sugar to achieve a thick icing consistency.
