What each ingredient does

Gelatine
Sets the liquid into a soft, wobbly structure as it cools.
Egg whites
Whipped air bubbles make the pudding light and foamy.
Sugar
Adds sweetness and helps dissolve the gelatine mixture smoothly.

The step that matters

Adding the egg whites. The mixture should be partly set but still soft. If it is too liquid, the whites deflate and the pudding stays runny; if it is too firm, the whites will not blend in evenly, leaving lumps and a dense texture.
