Why it works: Truffle and mushroom are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 1,900 recipes. Both carry 2,4-nonadienal, which smells fatty, green. The science ↓

Ingredients
Directions
Mix the quenelle forcemeat with truffle juice, chopped truffle, mushrooms, and ham or tongue.
Stir in enough cream to make the mixture soft.
Butter cutlet molds or rings and fill them with the mixture, smoothing the tops.
Place the molds in a large saucepan and pour boiling water around them, ensuring the water does not touch the forcemeat.
Poach for 5 minutes without boiling the water.
Remove the molds with a skimmer and place them on an inverted pan to cool.
Once cool, dry them lightly and cover each with Villeroi sauce.
Sprinkle with bread crumbs, moisten with egg, and cover with fresh crumbs.
