Cream Rolls

Ingredients

Directions

The book gives no oven temperature. The 425°F (220°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the dough

  1. Sift flour and salt into a bowl.

  2. Rub lard into the flour until well combined.

  3. Mix in the eggs.

  4. Roll the butter into the dough.

  5. Chill the dough, then roll it out thin and cut into 1‑inch wide strips.

Shape and bake

  1. Wrap the strips around tin rolls (5 inches long).

  2. Bake in a 425°F (220°C) oven for about 15‑20 minutes.

Fill and serve

  1. Once baked, remove the tin rolls and fill with meringue.

  2. To make the meringue, beat the egg whites until very light.

  3. Stir in powdered sugar and vanilla.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough that holds the shape of the rolls.
Butter
Adds fat that separates the dough into flaky layers and gives richness.
Lard
Adds fat that tenderizes the dough and helps it stay flaky.
Eggs
Add moisture and help bind the dough together.
Egg whites
Whipped into a light foam that gives the meringue its volume and structure.
Powdered sugar
Sweetens the meringue and helps it hold a smooth, stable texture.

The step that matters

Rolling the butter into the dough. Butter must stay in cold, distinct pieces within the dough. If it softens or melts into the dough, the layers blend and the rolls lose their flakiness.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, butter, egg, sugar):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against flour, butter, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
