Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mold

  1. Butter a tin timbal mold or cup.

  2. Line the mold with the red pepper.

Fill and bake

  1. Butter the inside of the pepper and fill it with chopped mushrooms.

  2. Drop a raw egg into each mold and sprinkle with salt and pepper.

  3. Place the molds in a baking pan half full of boiling water.

  4. Bake in a hot oven at 400°F (200°C) until the egg is thoroughly cooked.

Serve

  1. Turn out and serve with white sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red pepper
Forms the outer shell of each timbal and adds sweet, mild flavor and moisture.
Butter
Adds richness and helps the pepper and mushrooms brown lightly in the oven.
Mushrooms
Provide a savory, earthy filling that releases moisture as it cooks.
Raw egg
Sets as it cooks, binding the filling into a firm, sliceable timbal.

The step that matters

Bake until the egg is thoroughly cooked. A raw egg must reach a full set to firm up and be safe to eat. Baking the molds in a water bath moderates the heat, so the egg sets evenly without curdling or drying out at the edges.
