Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and soak the rice, then place it in a quart pudding dish.

  2. Fill the dish with milk and cream, and add the salt.

Bake

  1. Bake in a 350°F (175°C) oven for about 30 minutes.

  2. Add the sugar, vanilla, and raisins, then return to the oven.

  3. Cook slowly for 2 hours or longer if necessary, adding more hot cream if the milk boils down.

Finish and serve

  1. Before serving, spread fresh marshmallows on top and return to the oven until they swell.

  2. Garnish with candied cherries or red jelly before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Softens as it bakes and thickens the milk into a creamy, pudding-like body.
Milk and cream
Form the liquid base that slowly reduces, giving the pudding its richness and silky texture.
Sugar
Adds sweetness and contributes to browning on the surface during baking.
Raisins
Add chewy texture and concentrated sweetness throughout the pudding.
Fresh marshmallows
Melt and puff on top, adding a soft, lightly browned topping.

The step that matters

Slow cooking with added cream. Baking slowly for a long time lets the rice gradually absorb liquid and soften without scorching. If the milk boils down too far, the pudding dries out and sticks, so adding hot cream keeps the texture moist and creamy.

Swap the raisin

How well each one fits the dish's main ingredients (rice, milk, cream, sugar, vanilla):

  1. Coconutfits better
  2. Strawberryfits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against rice, milk, cream, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
