Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the custard-like filling and add richness and colour.
Gelatine
Sets the filling so it holds its shape when chilled and unmoulded.
Heavy cream
Adds light, airy texture and moisture when whipped and folded in.
Sponge lady fingers
Form the structure around the edge, soaking up moisture and holding the shape.

The step that matters

Fold in the whipped cream until it thickens slightly. Folding gently keeps the air in the whipped cream so the filling stays light. Overmixing deflates it, and the gelatine must be just beginning to set so the cream stays suspended rather than separating.
