What each ingredient does

Eggs
Whites trapped as stiff foam give the eggnog its airy lightness, while yolks add richness and body.
Sugar
Sweetens the drink and helps the yolks whip into a light, stable base.
Jamaica whisky
Adds spirited flavor and aroma to the drink.
Rum
Adds sweetness-balancing depth and aroma to the drink.
Heavy cream
Adds fat for a smooth, rich texture and body.

The step that matters

Fold the beaten egg whites into the yolk mixture.. Egg whites hold air only while their foam is intact. Folding gently, rather than stirring, keeps the bubbles from collapsing, so the eggnog stays light instead of turning dense and flat.
