Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Releases starch and flavor into the water, giving the drink body and a mild grain taste.
Lemon rind
Its oils add aroma and a bright, fresh citrus flavor.
Sugar
Adds sweetness to balance the grain and lemon flavors.

The step that matters

Boil down the mixture to 1 quart. Reducing by boiling concentrates the starch and flavor from the barley. Stopping too early leaves the drink weak and thin, while reducing too far makes it thick and strong, so the volume should be checked against the 1 quart target.

Swap the lemon

How well each one fits the dish's main ingredients (barley, sugar):

  2. Figfits better
  3. Raisinfits better

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
