Ingredients

Directions

Prepare

  1. Soak sweetbreads in cold salt water for some time.

  2. Parboil the sweetbreads and then place them in cold water.

  3. Once cold, carefully trim the sweetbreads.

Cook and serve

  1. Fry the sweetbreads in egg and bread crumbs until golden brown.

  2. Alternatively, bake the sweetbreads in the oven, basting them well.

  3. If not breaded and not brown, pour thick white sauce over them.

  4. If fried to a nice brown, serve with sauce around them.

  5. Tomato sauce, brown gravy, or curry sauce can also be used.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
The main protein, whose tender texture is the centre of the dish.
Egg
Binds the bread crumbs to the sweetbreads so the coating holds during frying.
Bread crumbs
Form a crisp coating that browns during frying.
Thick white sauce (such as bechamel)
Adds moisture and richness to sweetbreads that are not breaded or browned.

The step that matters

Parboil the sweetbreads and chill them before trimming. Parboiling firms the delicate membranes so they can be trimmed cleanly, and cooling stops the cooking so the texture stays tender rather than becoming rubbery.

Swap the tomato

How well each one fits the dish's main ingredients (egg, bread, sauce):

  1. Shallotfits about as well
  2. Asparagusfits about as well
  3. Capsicumfits about as well
  4. Tomatothe original

Fit is the average pairing score against egg, bread, sauce. Candidates are from the same food group and used in at least 100 recipes.
